What food are you running out of? We haven’t had any bread for a week or so now. But I have been making my mum’s ’emergency’ no knead, no yeast bread recipe and it’s so quick, easy and delicious. I thought I’d share the recipe with you, in case you’re struggling to get proper bread. This recipe is based on a simple scone recipe, minus the sugar. So strictly speaking, it’s not really bread. But it’s delicious fresh from the oven with butter, jam or cream, and is a great accompaniment to soup. It’s fun for kids to make too, and doesn’t need any kneading.
How To Make Quick & Easy No Knead, No Yeast Bread
This bread substitute takes about five minutes to prepare and 20 to bake and it tastes so good fresh from the oven. It uses self-raising flour, and no yeast, so you hopefully already have the ingredients in your cupboard and fridge. You can use powdered milk too, if you have run out of fresh milk.

Easy No Knead, No Yeast Bread Ingredients
- 8oz / 230g self raising flour
- 1tsp baking powder
- 2oz / 60g butter or margarine
- pinch of salt
- approx. 1/4 pint/150ml 50/50% mix of milk and water (I used powdered milk and it worked perfectly)
Easy Emergency Bread Method
Pre-heat your oven to 180 degrees Celsius / 350 degrees Fahrenheit and lightly grease a baking sheet.
Put the flour, baking powder, salt and butter/margarine in a food processor and whizz up to a breadcrumb consistency. You can do this by hand too.
With the food processor switched on, gradually pour in the milk and water mix. Take care not to add too much, the 1/4 pint is a guide and you may not need all of it. After a little while the dough will go into a ball. Stop adding milk and stop your food processor.

Remove the dough, shape in to a flat ball, and brush with the remaining milk and water mix.

Pop it into the oven and bake for around 20 minutes until it’s golden brown on the top. You can see it’s grown in size during baking.

Remove and leave the bread to cool. Although it’s great hot from the oven, it does go a bit crumbly, so if you can resist, leave to cool for longer for better slices.

This makes a small loaf, enough for two people.
